Tahini Dijon Dressing:

Add equal parts tahini and dijon mustard to a mixing bowl. Thin out to desired consistency with about 2/3′s extra-virgin olive oil and 1/3 rice vinegar. Season to taste with salt and pepper. I also added a few dashes of tumeric to this batch for the anti-inflammatory properties, but that’s optional. 

The nutty tahini both mellows and compliments the spicy dijon mustard in this dressing!
