Raisin-y Lemon Vinaigrette

1 tbsp fresh lemon juice
1 tsp balsamic reduction
4 tbsp extra-virgin olive oil
a large pinch of sea salt
rounded tsp of dijon
pepper
one dice shallot

Let the shallot sit in the acid for a few minutes before whisking in the vinegar. This is one of the best dressings I have ever made!

I love diced shallots in salad dressings. They add a sweetness and tang. I’ve been adding them to all my dressings lately.
